Mazafati is the date most people picture when they think of Iran — a soft, moist variety harvested by hand each autumn in the palm groves of Bam and Jiroft. Its thin, glossy skin gives way to a dense, almost caramel-like flesh with none of the fibrous chew of drier varieties.
Because it's sold soft rather than dried, Mazafati moves through a cold chain from grove to container, packed and chilled within hours of harvest to lock in moisture and shelf appeal for retail and foodservice buyers.
